Bad news — I didn't even have a chance to invite you all to an event we're partnering on. It's a four-course dinner under the open sky on a ranch in Castle Rock — a surprise menu from a serious chef, a handcrafted cocktail with every course, golden-hour Front Range views, and a communal table. A new butcher just landed on Parker's Mainstreet

I stopped by Rugby Scott in Parker last week. It's the family-run butcher that just opened right off the corner of Mainstreet and Pikes Peak Drive. Oh, and FYI, a restaurant and whiskey bar, SuBourbon, is also coming soon to the old Parker Chamber building on the corner. It's actively under construction.
What it is
Rugby Scott is built around American Wagyu and Black Angus, pasture raised with no added hormones or antibiotics and cut in house. Parker is the family's newest shop. The name comes from two towns, Rugby, North Dakota, where the Tuchscherer family homesteaded 160 acres back in 1884, and Fort Scott, Kansas, where the family's story continued. Five generations later, Dr. Ryan "Tuck" Tuchscherer, a Denver sports chiropractor who specializes in care for professional athletes, including on the PGA tour, turned that heritage into the brand you see today.
What's in the cases
The counter leads with beef. Ribeye, New York strip, filet, picanha, Denver steak, and a Wagyu bavette, plus a giant frenched shank they call a Thor's Hammer that is more centerpiece than cut. There is brisket, short ribs, and osso buco for low and slow, heritage Kurobuta pork, and lamb. Beyond the meat, the shelves carry local sauces and seasonings, farm fresh eggs, Hammond's candy, cheeses, and Nicola's Pasta handmade in New Jersey. Even the dog gets a section, Wagyu dog bones included.

Still coming together
The deli counter is still being built out, with the chef working up sides like coleslaw and potato salad, but don't worry…the tater kegs are already in the freezer. Another freezer is on the way and a whiskey wall is next once the bottles arrive. Down the line the team is kicking around events like cooking classes and whiskey tastings, though nothing is on the calendar yet.

Hours and a discount
They are open Wednesday through Friday from 11am to 7pm, Saturday from 9am to 7pm, and Sunday from 9am to 5pm, closed Monday and Tuesday. There was a card at the counter with code RUGBY for 10 percent off. Say hello to Cameron, who grew up in Parker and runs the place. He's the man! And this is yet another win for downtown Parker's Mainstreet, which keeps stacking up good local shops and restaurants.

UCHealth's new tower at Highlands Ranch Hospital is now open
TLDR: UCHealth recently opened a new five-story, 194,000-square-foot tower at Highlands Ranch Hospital. It adds a cancer center, 14 emergency department beds, and expanded stroke and cardiac services, part of a larger expansion that also includes a new medical office building.
The Town of Parker approves a pickleball, golf, and restaurant venue
TLDR: The Town of Parker has approved plans for Pick N Tap, a new entertainment venue that pairs a restaurant with indoor pickleball courts and golf simulators, on a site near EchoPark Stadium.
Castle Pines wants your input on a new annexation policy
TLDR: Castle Pines is not weighing any annexation right now, but after the Crowsnest petition was withdrawn this spring, the City is writing a policy to guide any future requests. A draft is posted for public review with an online comment period open through July 20, and City Council is expected to consider adopting it at its July 28 meeting.
A Douglas County resident is turning dance into a movement
TLDR: Chris Starkey's free "Gettin Down 4 Good" events bring the community together with the intellectual and developmental disabilities community on the first Saturday of each month, and they have grown from about eight people to nearly 80. The next one is Saturday, July 11 at 10am at Parker Arts Academy.
